Steak and Shrimp Entree Salad Recipe

We are on a perpetual mission to create salads that are delicious in the hope that low calorie eating doesn’t have to feel like torture. This particular recipe is a favorite way to use up left-over steak from either a restaurant or a home BBQ. Steak doesn’t really reheat well, so we wanted a way to eat the leftovers cold. Thinly sliced over salad, this left-over rib eye steak was marvellous. If you buy precooked shrimp, or happen to have leftovers as well, they make a nice addition to this very easy to prepare salad.

Steak and Shrimp Salad

Salad Dressing

• 1/4 cup soy sauce
• 2 tablespoons rice vinegar
• 1 teaspoon sesame oil
• 1 teaspoon sugar
• Chili Oil to desired heat

Salad Ingredients

Spring Garden Lettuce Mix – available at your local grocer.
Sweet Onion or Red Onion – very thinly sliced and cut into matchstick lengths
Grape Tomatoes – cut in half. Substitute with chunks of regular tomato.
Celery cut up any way you like it
• Avocado – Sliced or cut into chunks
• Shrimp – 4 – 6 per plate depending on their size. You can buy pre-cooked shrimp if you’re looking for a quick meal. Or get raw shrimp and saute/bake/barbeque to your liking.
• Steak – great for left-over steak from restaurant or bbq. You can also quickly grill up an 8 oz steak and split it between salads, or use a 6oz for one salad.
• Sesame Seeds – Toasted if you like

Toasting Your Sesame Seeds

• Pre-head oven to:    325 degrees Fahrenheit.
Cover shallow tray, aluminum wrap or  baking sheet with single layer of  sesame seeds.
• Monitor them carefully, they can burn quickly.
• Remove once lightly browned and fragrant
• Let cool.

The Salad:

• Crisp and Drain Your Lettuce

• Create a bed of lettuce on each serving plate.

• Layer Onion, grape tomatoes and celery on top – the proportions are to your personal taste.

•  Slice or dice avocado, sprinkle with lemon to keep from browning before serving. We suggest using up the whole avocado as it doesn’t keep well.

• Layer on shrimp.

• Thinly slice Steak against the grain and layer that on as well.

• Sprinkle sesame seeds

• Drizzle on salad dressing or serve on the side.
